Mars Shinshu distillery has been around since 1985, but spent the best part of a decade silent, making the whiskies hard to find. At the highest altitude of all Japanese distilleries, there are dramatic fluctuations in temperature that age the whisky rapidly. Only 10,000 bottles exist worldwide.

Tasting notes
Nose
Sweet toasted banana bread baked with drops of vanilla essence. A generous spoonful of yoghurt on top with faint wafts of smoke and cherry blossoms.
Taste
Excellent palate weight with a melange of ripe stonefruits and sweet oranges. Toffee, caramel and burnt honey sweetness coats the mouth and has a slightly floral edge.
Finish
Sweetness rapidly fades with a dry, spicy finish of ginger and white pepper, combined with a cloud of lingering floral smoke.
