$175.00Michel Couvreur has yet again worked his own brand of magic on Scottish sourced malt. This dram has been matured exclusively in Jura vin Juane wine casks for 10 years - a white wine produced from Savagnin in Eastern France, similar to fino Sherry. The barrels were sourced directly from the Jura wine region before being delivered to Couvreur's Burgundy mountain cave where they were delivered, emptied and wet filled with Scottish distilled spirit all in the same day. Absolutely remarkable in every way!

Michel Couvreur is more than an independent bottler. He purchases a mix of clear malt distillates and aged single malt whiskies from Scotland and then further matures them in Burgundy, France in the Bouze-lès-Beaune - a region better known for fine wine than fine whisky.
Originally a Belgian wine merchant, Michel spent considerable time in Scotland between the 1950s and 1970s, immersing himself in the whisky industry, before returning to France. Shortly after, he carved an impressive 500ft cave inside the mountains of Beaune to age his sourced spirit, which gives a uniquely stable climate allowing far longer maturation than traditional warehouses. The result is a unique depth and character of flavour unobtainable by his classically produced Scottish counterparts.

Tasting notes
Nose
First comes plenty of red apples and ripe pears, with gentle honey and sweet malt notes. An intriguing combination of saltiness and umami, almost like a sake, develops with time.
Taste
An absolute surprise package on the palate - smooth as silk with rich golden syrup, prune and date notes. Zesty orange peels brighten things up with a potent maritime salinity.
Finish
A medium length finish, drying out gently with supple tannins, liquorice, powdered nutmeg and polished oak.
