These rich and spicy Scottish Highland Single Malt whiskies have benefitted from absorbing residual sweet and fruity fortified wine flavours from the previously seasoned oak casks during their maturation. Fortified wine casks like Sherry butts, Port pipes and Madeira hogsheads, have long been re-used for the resting and ageing of whisky. In more recent times, their use has become an essential element of flavour development, with each contributing to a unique flourish of deep aromas and complex flavours.
