Part of the Trials & Exceptions series, this limited edition whisky was an innovative experiment to peat barely using native ingredients, which could potentially be used as a sustainable replacement to Scottish peated malt. Locally sourced Stringybark has been used to smoke NSW barely, which is then added to a mash-bill featuring another four locally sourced malts. The resulting spirit is then aged in 16 Australian Apera casks (Char #4).

Tasting notes
Nose
Sweet citrus and smoky meats transition into a buttery, sweet maltiness. Very balanced and complex.
Taste
Reveals notes of campfire smoke, complemented by the presence of almonds and buttery sweetness, accompanied by sharp citrus.
Finish
Complex and long; fresh citrus notes give way to the development of campfire smoke, all while maintaining an aromatic sweetness throughout.
