Famous for being purchased, then sold, by Hollywood star Ryan Reynolds, Aviation Gin was one of the trailblazers for the “American Dry” style. Like many contemporary gins, Aviation lessens the focus on juniper, letting other botanicals provide much of the flavour. Aviation begins with a rye spirit base, lending subtle spice and character, which is flavoured with ingredients including sarsaparilla, lavender and orange peel during a 48 hour steeping process.

One of the leading "New Western Gins", Aviation is a gin that moves away from the intensely dry, juniper-driven profiles of traditional gins.
Made in the cool capital of Portland, Oregon, Aviation is named after the classic cocktail of the same name, that is made with gin, maraschino cherry liqueur, crème de violette, and lemon juice.
The gin is produced in pot stills, giving it a subtly thicker body, and is presented in an art deco styled bottle, designed to recall the golden age of aviation.

Tasting notes
Nose
Fresh aromas of lemon peel and juniper take centre stage, alongside a gentle undercurrent of fragrant flowers, earthy spice and a little chopped herb.
Taste
Definitely spicier here, with the sarsaparilla coming to the fore, followed by some subtle rye spices, cardamom, bittersweet juniper and liquorice. Medium-bodied and mouth-coating.
