A fascinating bottling from Barrell Craft Spirits. Dovetail is aptly titled: consisting of a duo of whiskies. One is a whiskey aged for 10 years, with a finish in Dunn Vineyard Cabernet barrels, and the other is an 11 year old Bourbon, finished in a combination of blackstrap rum casks and Late Bottled Vintage Port barrels. The final result is a small batch American whiskey unlike anything else we’ve tasted.
More Details
Barrell Craft Spirits are a relatively recent addition to the American whiskey scene, having been founded in 2013. In their brief history, they’ve already established themselves as one of the most exciting and acclaimed spirits companies in America.
Inspired by Scotland’s tradition of “Independent Bottlers” – that is, companies that do not distill themselves, but purchase, blend and bottle spirits from other distilleries – Barrell sources spirits from across the world.
Like Scotland’s “Indies”, Barrell produces smaller batch, often experimental, bottlings featuring interesting finishes or distillation styles. So far, every bottle they have created has been presented at Cask Strength.
Most of Barrell’s bottlings have been either Bourbons, Ryes or American whiskies, but they have also branched out into Rums, suggesting a bright future of bottling spirits of all varieties.
This dram, an intriguing combination of spirits and cask finishes, is an excellent example of what Barrell are all about!

Tasting notes
Nose
A nutty, and rather savoury nose, with aromas of warm leather, oily walnuts, flamed orange rind, alongside classic rum notes of dark molasses and liquorice.
Taste
Full bodied and spicy, with rich flavours of cola cube lollies, nutmeg, black pepper, treacle and toasted marshmallows. There’s some underlying Port-cask sweetness.
Finish
Long and sophisticated, with oakier notes of barrel char, vanilla and honey coming to the fore, alongside a slight brightening mint note.
