Found in restored rainforests in the beautiful Byron Bay hinterland, Cape Byron Distillery is another of Australia’s most sustainable distilleries. A certified B Corp, Cape Byron has to maintain stringent environmental, social and corporate responsibility standards. The whisky itself has been aged in Australian Chardonnay casks.

Tasting notes
Nose
A wave of nutty malt greets the drinker, soon followed by aromas of chocolate, caramel sauce, sweet white wine, oak and vanilla.
Taste
Fruitier and richer here, with a luscious mouthfeel bringing sultanas, raisins, more fudgy chocolate, some drying spice, and hazelnuts.
Finish
Medium long and oaky, boasting nutmeg, freshly cracked black pepper, a little citrus rind, vanilla and wood tannins.
