The team at Cape Byron Distillery have been patiently waiting whilst their whisky has been maturing, where humid subtropical rainforest air meets the cool sea breeze, in the Byron Bay hinterland. Collaboratively fermented with local brewers to get the perfect wash, double distilled in copper pot-stills and aged in ex-Bourbon barrels, this whisky is beautifully balanced and expressive of the local terroir.

Tasting notes
Nose
Warm and inviting aromas of grapefruit peel, charred pineapple, aromatic estery notes, underpinned by balanced vanilla and sweet oak.
Taste
Bold and expressive release of sweet and complex fruit notes, citrus peel and malted barley evolving into a warm woody spice.
Finish
A long lasting prickle fades into notes of dried fruit and dark vanilla spice, which combines nicely with drying oaky tannins.
