‘Resposado’ translates from Spanish as ‘rested’, and this spirit has rested in American oak barrels for six months. The San Nicolas Distillery produce their spirit from 100% blue Weber agave, playing it music during fermentation to ‘inspire’ it to become great Tequila (apparently classical music is better for the yeast).

Tasting notes
Nose
Opens up with lemon zest and fruity agave notes, with some white pepper and toffee coming through.
Taste
More toffee, joined by buttery oak, vanilla, nutmeg, roasted agave and milk chocolate.
Finish
Quite long, bringing a persistent cocoa flavour, alongside herbaceous agave and earthy spice.
