Lark finds itself in the strange position of being both a child of the 90s, and the elder statesman of Australian distilling. Lark was the producer that properly kickstarted the Aussie distilling renaissance, being the first new single malt distillery in 154 years.
The distillery was the product of one man’s dream, Bill Lark, who gave his name to his creation. To this day, it continues to produce high quality Australian whisky using locally grown brewers’ barley, and peat from the Tassie highlands. The Cask Strength expression is an aggressive statement of intent – Lark, and Tasmanian whisky, is here to stay.

Tasting notes
Nose
Subtle peppery peat smoke takes the lead, soon followed by overripe bananas, dried apricots and toasted oak. Chopped mint and vanilla come with time.
Taste
Big, full mouthfeel with jammy figs and dark chocolate. Crunchy malt, vanilla, hot cinnamon and polished oak provide body and depth. There’s a fleeting wisp of peppery Tasmanian peat.
Finish
Maple charcoal, dried apricot and sweet peat linger in this long, intense finish. A remarkable achievement from Lark.
