Expect plenty of classic Aussie spice and sweetness with this drop, bottled at 43% and without chill filtration for a full, warming body.

Bill Lark was just a whisky lover on a fishing trip when the notion struck him: “Why isn’t anyone making malt whisky in Tasmania?” The climate was perfect. The land fertile and rich, and the fresh water plentiful.
What began as a question became the first new whisky distillery in Tasmania for 154 years in 1992. It was given Bill’s surname. Since then, Lark have gone from strength to strength, whilst Australian distilling has skyrocketed. It’s safe to say that without Lark, Aussie distilling would not be in nearly as good shape, and the whisky world would be a far poorer place.

Tasting notes
Nose
Christmas in a glass. Rich cinnamon, nutmeg and cloves open this dram beautifully, alongside vanilla, peppered oak and syrup-soaked plums.
Taste
A wave of butterscotch, lemon rind and honeyed malt greets the palate, alongside subtle grapefruit, toasted oak and fresh vanilla bean.
Finish
A long, yet soft, finish with a subtle smokiness and caramelised citrus rinds. Deeply enjoyable and the perfect introduction to Australian whisky.
