A remarkable Lark whisky that combines two parts of the company’s distilling operation: their whisky, and their high quality Quiet Cannon rum. After bottling the rum, Lark were left with wonderful, super-sweet rum casks that were just crying out to be filled with single malt whisky. And so they were, with these barrels being filled with Bothwell distillery spirit that had previously been matured in Sherry casks.

A nod to Lark’s Quiet Cannon rum features on the whisky’s label.
Quiet Cannon began by using Lark’s whisky copper pot stills, and maturing in former whisky barrels. Now it’s returned the favour, supplying the casks for this delightful single malt.
Truly a testament to the versatility of distilling on show at Lark.

Tasting notes
Nose
Fruity and powerful – with lush aromas of fresh apples, pears, treacle tart, slightly floral honey, funky molasses and sweet vanilla-oak.
Taste
Just as full-bodied as the nose suggested, with the palate bringing opulent flavours of nut-studded toffee, nougat, dark chocolate, candied orange rind, malt biscuits and a little stem ginger.
Finish
Very long, serving up persistent flavours of subtle woodsmoke, dried fruits, more molasses and treacle, slight bananas and overripe pineapple.
