Courveur's "Scotch" starts out in Scotland as bulk a.k.a.“clearach” (a high proof distillate) which is transferred to his humid cellar in Bouze-les-Beaune to be aged in small sherry casks that have been impregnated with 24 years ageing via traditional soleras. All required dilutions are accomplished with bottled water from Scotland. A small selection of these artisan matured spirits has just arrived in Australia.

Michel Couvreur is an independent bottler who purchases single malt whiskies from Scotland and then ages them in Burgundy, France in the Bouze-lès-Beaune; a region certainly known more for fine wine than fine whisky. This is a blend of up to 50 different single malts ranging in age from 12-27 years. This vatting ages in ex-sherry butts and is bottled at 86 proof.

Tasting notes
Nose
Soft vanilla and malt on the nose. Some attractive dried fruits adding depth on the second inspection then more cereals and finally, fruit and nut chocolate.
Taste
Immediately captivates with its svelte, cream - textured entry; lovely integration and balance with fruit and nut flavours augmented by buzzing spices.
Finish
Shows good persistence, with a long fruity and smoky finish.
