Michel Couvreur The Unique is quite the oddity in the whisky world, in the best possible way of course. The spirit starts its life out as Scotch (distilled, and sometimes aged in Scotland), before being shipped to Michel Couvreurs custom-built “cave” in the world famous wine region, Burgundy. There it is re-casked and further aged to create a uniquely French whisky with some of the best fortified wine casks on the planet. The unique combines Scottish and Irish traditional methods, with Michel Couvreurs signature techniques to create one of the most “Unique” and delicious whiskies in the world.
More Details
Michel Couvreur is an independent bottler who purchases single malt whiskies from Scotland and then ages them in Burgundy, France in the Bouze-lès-Beaune; a region certainly known more for fine wine than fine whisky.
Originally a Belgian wine merchant, Michel spent considerable time in Scotland between 1950 and 1970 immersing himself in the whisky industry, before returning to France. Shortly after, he carved an impressive 500ft cave inside the mountains of Beaune to age his sourced spirit, which gives a uniquely stable climate allowing far longer aging than traditional warehouses. The result is a unique depth and character of flavour unobtainable by his classically produced Scottish counterparts.
The Unique is Michel Couvreur's answer to high-end Scottish and Irish blends - made with both malted and unmalted barley, distilled in both pot stills and column stills. Partly aged in Scotland before a finishing period of 4 years in traditional oak casks for 4 years in France. Bottled without filtration for extra complexity and texture.

Tasting notes
Nose
Sweet cereal comes first on the nose, with notes of shortbread biscuits and bales of hay. Zesty lemon and orange peels bring balance and complexity.
Taste
The mixed citrus rinds follow through onto the taste, with fresh cut grass and rolled oats. Earthy spice underpins the bright notes, featuring nutmeg and cinnamon.
Finish
The finish is relatively short-lived, but moreish. Flecks of baking spice and vanilla-oak keep you coming back for more.
