‘Edited’ from Indian distillery Paul John is exactly that – a single malt “edited” with the addition of about 20% peated barley from Scotland. For the rest, Paul John uses the finest Indian six-row barley, grown at the base of the Himalayas to create their magnificent juice. A wonderful, subtly smoky dram.

\r\n\r\n\r\n\r\nPaul John distillery is one of the pioneers of Indian whisky, utilising the hot and tropical climate of Goa to their advantage. Established in 1996, their whiskies have had plenty of time to mellow and develop a unique character. With a savoury turns dessert flavour profile, this whisky is the perfect bridge between the main course and dessert.

Tasting notes
Nose
Crispy burnt bacon from a wood-fired barbecue. Some vegetal tones of celery and tinned green peas. A definite salinity. Once the savoury notes pass, there is an underlying honey sweetness.
Taste
Surprising on the palate and disconnected from the nose. The savoury notes are gone, and the wildflower honey takes over. The sweet honey notes become more caramelised muscovado sugars as time goes on. Caramels turn burnt and bonfire smoke returns.
Finish
The smoke evolves into an espresso & bitter dark chocolate finish. Dry with earthy root vegeta- bles and soft liquorice root.
