This spirit was developed by drinks historian David Wondrich and Plantation cellar master Alexandre Gabriel. Pineapple rinds are infused with white rum for a week, before being redistilled, while pineapple flesh is infused with dark rum for three months. The two spirits are blended, and aged in casks for three months.

Nose
Intense pineapple rind gives away to ginger, melon, oak and mango.
Taste
Tart pineapple juice, followed by earthy spice, brown sugar, and buttery biscuits.
