Waterford Luna 1.1 stands as a groundbreaking effort by Waterford Distillery to merge biodynamic farming with whiskey production. As the world’s first whisky made from biodynamic barley, using barley from four farms during the 2017 season, it reflects a deep commitment to terroir, provenance & innovation. Aged for over three years in a unique array of casks including first-fill American oak, virgin oak, French oak, and Vin Doux Naturel, it's a testament to innovation and craftsmanship in whiskey-making. Bottled at 50% ABV, it offers a unique exploration of flavour influenced by natural agricultural methods, and unique cask selection.

Tasting notes
Nose
Rich aromas of fresh barley, lemon zest, and white flowers, complemented by hints of porridge and a subtle maritime salinity.
Taste
Begins with a sharp rye-like edge, evolving into complex notes of white pepper, dough, and mouth coating tannic of unripe pear, with a zesty, salty finish reminiscent of tequila.
Finish
Lasting and spicy with emerging green fruit and lemon peel, underscored by a warm clove essence from the virgin oak.
