A remarkable Australian whiskey from Adelaide Hills Distillery. Better known for its gin, the South Australian distillery has turned its considerable talents to producing a superb whiskey. Entirely traceable, this whiskey uses locally sourced grain and is aged in hand selected wine casks. In all, six different styles of malt are used for this dram: Biscuit, Supernova, Redback, Toffee, Crystal, and Chocolate.
More Details
Created by Sacha La Forgia, who wanted to produce an entirely new, distinctly Australian style, made sustainably sourced ingredients. All the barley found in this bottling is from local, single paddock, GM-free farmers, grown using only rain water.
The whiskey is also made with the unique challenges of the Australian environment in mind – the spirit is both fermented and distilled "on the grain" so as not waste water. A single-shot distillation is used here, as opposed to the double distillation preferred Scottish producers. This practice also reduces energy and water usage.
A thoroughly modern whiskey, that perhaps shows the way forward for Aussie distillers.

Tasting notes
Nose
Seriously malty, with notes of fresh biscuits, flapjacks and warm bread. A little oaky cinnamon comes with time, joined by wine-like grapes, vanilla and milk chocolate.
Taste
Soft and supple – bringing flavours of orange rind, baked apples, wine tannins, weighty sweet malt and some drying, aromatic oak.
Finish
Brings a distinctive pink grapefruit flavour, joined by a peppery red wine note that lasts and lasts.
