Milk and Honey is the first single malt whisky distillery in Israel and the classic single malt is the first ongoing whisky they have put into production.
Milk and Honey was only set up in 2014 but their determination to go global has seen them garner much attention from the whisky community.
It is located in Tel Aviv, where temperatures can go as high as 40 degrees. This is why despite the Classic Single Malt only being matured for 4 years, it tastes much more mature.
With 80% of this single malt aged in bourbon barrels, 3% in virgin oak and 17% in STR casks (Shaving, Toasting and Re-Charring casks – an approach championed by their consultant, the late and legendary Jim Swann), this is a whisky that has bags of flavor.
There is plenty of oak and spice competing with sharp fruits and a vanilla sweetness. A little water brings the best out of this whisky, which already suggests Milk and Honey, and the Israeli whisky industry has a bright future.
