This cocktail dates back to the early years of flight – when planes were a novelty and pilots were daring pioneers. The Aviation is so named because the touch of Creme de Violette in the recipe creates violet-to-blue hue in the completed cocktail.
Creme de Violette is not the most readily available of ingredients, but it is well worth seeking out, adding subtle floral note to this drink that contrasts beautifully with the botanics of the gin and the earthy cherries of the Maraschino.
