Chief’s Son Distillery, a family-owned and operated small batch distillery located in Victoria’s Mornington Peninsula, recently launched its first commercially available peated single malt. Produced using a floral style of peat, rather than coastal peat used by most Islay distilleries, this dram is matured for three years in second-fill French Oak Sherry casks, before further developing more character from an additional year in first-fill American Oak Bourbon casks

Tasting notes
Nose
Fruity and smokey! A complex blend of smoked red berries and citrus with a slight hint of vanilla.
Taste
Deep, dark and peated. The smokiness of the peated plays well with the rich fruit influence of the sherry casks.
Finish
The smokiness stays a while before transforming into a floral vanilla note.
