Four Pillars Distillery was started by three mates and one copper still in 2013, with the goal to champion Australia’s diversity, creativity and delicious flavours. This Olive Leaf Gin expression is inspired by the botanicals of the Mediterranean, yet sourced locally here in Australia. Botanicals such as olives, rosemary and bay leaf create a complex, almost savoury delight.

Four Pillars is one of the distilleries that can be credited with putting Australian gin on the map. From a humble beginning, the distillery moved to a larger site in 2015, becoming one of Australia’s larger craft gin producers. Four years later, their hard work was rewarded, picking up International Gin Producer of the Year in 2019 and 2020.
Innovation is the name of the game at Four Pillars, as shown by this fascinating bottling which uses three kinds of extra virgin olive oil and olive leaf tea from the famed groves of Victoria's Cobram Estate.

Tasting notes
Nose
Opens with a blast of herbal complexity, featuring fresh sage, coriander spice all underpinned by green tea leaves. Juniper emerges, with a big hit of cut grass, cedarwood & Meyer lemon zest.
Taste
Full-bodied and complex, but everything sings in unison. At first, candied citrus peels and earl grey tea take hold, before a wave of black pepper, liquorice, more grass, rich verdant herbs and olive brine.
