A double Tokay matured dram from venerable Tassie distillery, Lark. This whisky was initially aged in tiny 100 litre Tokay casks, super-charging the spirit with juicy fruit flavours, before it was finished in a pair of larger 300 litre Tokay barrels for a little more sophistication. Indulgent stuff.
Despite being the oldest whisky distillery in Australia, Lark still finds ways to innovate and impress. Tokay barrels are rarely used, even in Scottish whisky making, but have the potential to create some of the most opulent and delicious whiskies.
This whisky’s 300 litre barrels, were sourced from the Seppeltsfield Winery in the Barossa Valley, one of the oldest vineyards in Australia. High quality casks and superb new make spirit from Lark’s Coal Valley site never fail to produce a delicious whisky, and this bottling is no exception. A 2021 release that is highly limited in number.

A uniquely Australian nose, with a bouquet rich in dried Aussie natives: frangipani, eucalyptus and lemon myrtle. Honeyed plums and smoked tea emerge later.
Syrupy and full bodied, this dram offers notes of dried apple chips, espresso, vanilla custard, leather, dark oak, figs and toasted malt.
A rather soft finish with a medium length. Succulent notes of papaya, mild coffee and elegant sweet peat smoke linger.
