
High West Distillery
High West Distillery was founded in 2006 by husband and wife duo David and Jane Perkins. David, a former biochemist, was inspired to open his own distillery after seeing the parallels between the fermentation and distilling process and his own work in biochemistry.
High West began distilling in 2007, making them the first legally licensed distillery in Utah since the end of the American Prohibition. In 2016 Whisky Advocate named High West its "Distiller of the Year.”
High West makes its spirits in small batches in a 250-gallon copper pot combination still. This kind of still allows for use as either a continuous/reflux still or separately a pot still - which allows for a variety of unique distillates to be produced.
