Once you master the Gin Sour, you can make a whole swathe of drinks. The Southside is the perfect example of how by adding just one ingredient (mint), you can create a whole different drink. If you like Mojitos then this drink is for you. By adding soda water and serving long on ice you can also create the refreshing Southside Fizz.

Ingredients
60ml Gin20ml Lemon juice (freshly squeezed)20ml Sugar syrup (1 part sugar : 1 part water)3-4 Fresh mint leaves
Garnish None
Ice Cubes (for shaking)
Glass Cocktail glass

Instructions
1. Add all your ingredients to the shaker.
2. Fill shaker to the brim with cubes of ice.
4. Shake hard for 30 seconds.
5. Fine strain into an ice-cold cocktail glass.
Bartender’s Top Tips
The classic recipe calls for lime juice, rather than lemon juice. However, we have recommended lemon juice in this recipe as we find that lime juice is generally too sharp and overwhelms the delicate character of the gin.
Remember to chill your glass in the freezer for 5 minutes before you fill it, to keep your drink colder and fresher for longer.
Fine straining through a mesh strainer (like a tea strainer), removes all the small chips of ice and bits of mint to create a silky smooth texture.
