
Caol Ila Distillery
Pronounced 'Cull-Eela', the distillery is situated on the North-Eastern shores of Islay with magnificent views across the Sound of Islay. Now the largest distillery on the island Caol Ila’s spirit is a key component of Diageo’s blends. However, over the past decade drinkers have had more opportunity to try the distillery’s whisky and it has been growing in stature as a single malt in its own right.
Caol Ila is one of the lighter Islay whiskies, pale in colour, with peaty, floral and peppery notes. The key to this style is the low fill level in the stills. Filling to around 33% of capacity allows for significant levels of reflux in the stills, where vapour condenses on the side of the stills and runs back into the bowl to be further purified.
