A contemporary take on a classic dry gin from Bec Zammit and the Cairns-based Narrow Tracks Distilling. Made with their own base spirit, this gin has a host of traditional gin botanicals, alongside locally grown macadamia nuts and red finger limes. 

A deliciously juicy example of Australia grape gin from Holly Klintworth. This bottling brings together traditional gin botanicals such as juniper, coriander, pepperberry, and angelica with wild fermented Pinot Noir juice. Pinot Noir is notoriously difficult to grow, and this gin is named after the ‘heartbreak’ winemakers often feel when dealing with this grape!

A powerful cask strength whiskey that celebrates the nation’s famous writers (and the spirit that often helped them solve writers’ block). This cask strength dram is a blend of single malt and single pot still whiskies that have been triple distilled in the time-honoured Irish style, before being bottled at a robust 54.2% ABV by the Walsh Whiskey company.

It’s all about juniper with this gin, which uses the core botanical in three different ways, for maximum flavour. Rounding things out are Australian coriander seed, Tahitian lime, and lemon scented gum. The very first gin to be released from the new Archie Rose distillery in Banksmeadow, this spirit showcases the innovative techniques of the Sydneysiders.

A fascinating rye whisky from maverick distiller Peter Bignell and his Belgrove Distillery, known for being one of the most sustainable on the planet. This spirit has been made using rye grown by Bignell himself and smoked with peat dug from Tasmania’s Central Highlands (also by the main man). The result is spicy, fruity, and smoky rye. 

Found in the heart of Speyside, the picturesque distillery of Aberlour comes complete with its own waterfall. This dram shows off what the distillery is all about – with both spicy sherry butts and first-fill Bourbon casks used to produce a whisky of superb balance and poise. At 16 years old, you can expect plenty of character from this one.

Forty Spotted is inspired by the rugged beauty of Tasmania, and draws on decades of Lark’s distilling expertise to produce a range of classic gins. The Wild Rose gin has soft floral notes of wild rose, jasmine, and violets, citrus notes of lime and pink grapefruit, balanced with savoury hints of juniper and Tasmanian pepperberry.

While most Rye Whiskey you'll find in stores these days hover around the legal limited of Rye in their mashbill, 51%, the High West Rendezvous Rye is a blend of two straight rye whiskies each with a much higher percentage of Rye. 

The first is an 6-Year-Old with 95% rye in the mashbill, while the second is a very rare 16-Year-Old with 80% Rye in the mashbill. This is a whiskey for the Rye purists!

A classical botanical make-up with gently steamed botanicals, this gin is the epitome of sophistication and balance.

During a trip to Japan, Christian Jensen discovered an old bottle of London gin that was now out of production, and it tasted completely different from all the other London dry gins available. So in 2004, he set out to create a gin that honours those lost classic gin recipes. This gin won a vast amount of followers with its uncluttered juniper-forward style, which works exceptionally well in classic cocktails

Their signature Sydney Dry gin is infused with a combination of fresh strawberries, hibiscus flowers and young ginger.

Roughly translating to ‘The beauty of the seasons’, this is a gin inspired by tradition and location. Made in the traditional dry style, the gin has a distinct Japanese twist – using a base of rice spirit, and fascinating Japanese botanicals including bamboo and hinoki wood. The gin is diluted with water from the famous Sake-making region of Fushimi.

Made with botanicals including fresh green apple, native strawberry gum leaf, chamomile and of course a classic juniper backbone, this is an easy-drinking gin that explodes into a bouquet of flowers when mixed.

Born from a desire to take Australian coffee culture into the night, Mr Black have sparked a global movement. Specialty beans are sourced from the world’s best growing regions, then roasted and transformed into consistently concentrated cold brew coffee liqueur on the Central Coast of NSW. The final product is a complex spirit that is bold, balanced and unapologetically coffee.

An Australian taken on the classic Italian Aperitif style, featuring a combination of traditional European bittering botanicals, and native Aussie ingredients – including the "hero ingredient" of Riverland Orange. 

Use this liqueur in Boulevardiers and Negronis!

To make this totally original pastry spirit, the team at 78 Degrees have taken leftover croissants, fruit danishes, pain au chocolat and mixed them with local barley. They ferment and distill them together and add the new make spirit to hand-selected South Australian red wine casks.

This delicious spiced rum from Husk Distillers has depth and richness from a natural infusion of fruits and spices in their 3 to 4 year old barrel aged rum. Aged in the warm climate of Northern NSW, Husk Bam Bam has native wattleseed, giving it an earthy nutty foundation. Additional spice comes from native ginger, mandarin and orange peel, cinnamon quills, Tahitian vanilla and a dash of sea-salt.
