Waubs Harbour Distillery, located in Bicheno on Tasmania's rugged east coast, offers the Founder’s Reserve as its most premium expression. This single malt whisky is matured in top-quality ex-tawny port casks, carefully selected by the head distiller, and bottled at an impressive cask strength of 62% ABV. With only 471 bottles produced, this whisky is a rich, oily delight, capturing the essence of Tasmania’s maritime climate with intense, fruity, and salted caramel notes.

This 18-Year-Old is a rare, limited-edition release from the Penderyn Distillery, exclusively bottled for the Australian market with only 157 bottles available. This expression, the oldest from Penderyn to date, is matured in ex-bourbon barrels before an exceptional finish in a rich red wine cask from Buller Wines in Rutherglen, Australia. The long maturation and unique cask influence create a deeply complex whisky with layers of dark fruit, spice, and rich oak.

This 28-year-old single grain Scotch whisky hails from the North British Distillery, one of Edinburgh’s storied grain whisky producers. Selected and bottled by The Whisky Cellar, a prestigious Edinburgh-based independent bottler founded by Keeper of the Quaich Keith Bonnington, this rare expression was distilled in November 1994 and matured in a first-fill ex-bourbon cask. With only 180 bottles available, this whisky presents an exquisite blend of creamy vanilla, caramel wafers, and coconut, showcasing the elegance of long-aged grain whisky.

Michel Couvreur Special Vatting Peaty Malt Whisky is a sophisticated blend of three single cask Scotch whiskies, each aged over 12 years in oak and finished in Burgundy, France. This unique creation combines mellow, sherry-influenced whiskies with a younger peated malt, achieving a perfect harmony of flavours. Michel Couvreur, a Belgian pioneer in whisky ageing, was known for preserving traditional whisky-making methods by maturing spirits in rare sherry casks within his 500-foot underground cellar in Bouze-Les-Beaune. His approach blended Scottish distillation with French ageing techniques, producing whiskies celebrated for their complexity and balance.

Produced by the McLaren Vale Distillery, this single malt whisky is a testament to the innovative spirit of this relatively new distillery, which draws upon the rich winemaking heritage of the McLaren Vale region. Collaborating with Maxwell Wines, the distillery ages this whisky in American oak barrels previously used for port, imparting a deep gold colour and layers of complex flavours. The result is an elegant whisky with a rich mouthfeel, showcasing notes of marmalade and subtle vanilla. With only 185 bottles released, this expression captures the unique terroir and craft of both the distillery and the winery.

Kavalan Solist Madeira Cask is a rare Taiwanese single malt, bottled at cask strength and limited to just 219 bottles. This whisky showcases Kavalan's innovative approach, maturing in Madeira wine casks that impart rich, fruity complexity. The distillery's tropical climate enhances maturation, creating a spirit brimming with flavours of sweet berries, spice, and creamy textures. It's a true representation of Kavalan's commitment to quality and craftsmanship.

Hickson Wild Rosé Summer Cup is a vibrant and refreshing aperitif crafted by Hickson House Distilling Co. in collaboration with Regal Rogue. This blend of Hickson Rd. Australian Dry Gin and organic Cabernet Rosé Vermouth is infused with native bush tomato, muntrie berries, and tonka bean. The infusion of muntrie berries imparts a distinct fruity character and a striking rosé hue, while the carefully distilled tonka bean and bush tomato add a unique depth, making it perfect for summer cocktails or a refreshing aperitivo.

Crafted in the Yamanashi Prefecture, Tenjaku Gin combines traditional Japanese botanicals with a delicate citrus infusion. Produced by the Tenjaku Distillery, known for its meticulous attention to detail, this gin features native ingredients such as yuzu, sansho pepper, and green tea, creating a harmonious blend. The pristine waters from the Misaka Mountains contribute to its crisp, refreshing character. Awarded 93 points at the New York International Spirits Competition, it also received the 2022 Japanese Distillery of the Year.

Tromba Cafeto Tequila Coffee Liqueur is an innovative blend that marries the elegance of 100% agave Tromba Tequila with the rich depth of Mexican-grown Arabica coffee. Hartshorn Distillery, sharing its land with Grandvewe Cheeses in Tasmania, creates Sheep Whey Pure Vodka from whey, a byproduct of cheese production.
